Perfectly Cooked Steak; Reverse-sear Technique


Ingredients:

  • Thick cut Davidson Family Farms steaks at least 1.5-2 inches thick

  • Salt

  • Pepper

  • Or favorite steak seasoning

  • 1 tbs butter

• Mushroom wine sauce 

  • 2 cloves garlic

  • 1 sprig rosemary

  • 2 cups sliced mushrooms

  • 1.5 cups dry red wine, like cabernet


Serves: Depending on steak size, 1 or more steaks

Prep Time: 10 minutes

Total Time: Depends on doneness, about 40 minutes


Directions:

  • Preheat oven to 200°F

  • Dry steaks with paper towel removing excess moisture

  • Generously season steaks with salt & pepper or favorite steak seasoning and place on foil lined, rimmed cookie sheet. Place oven safe thermometer into the thickest part of the meat.

  • Place steak(s) in the oven and cook until an instant-read thermometer registers 105°F for rare, 115°F for medium-rare, 125°F for medium, or 135°F for medium-well. This process will take about 20 minutes for rare steaks and up to 40 minutes for medium-well. The cooking time can vary largely due to several factors so keep an eye on the thermometer.

  • Once steaks reach desired temperature, remove from oven.

  • To finish the steaks off they can be grilled or seared on the stove top.

    • Grill finish: preheat grill with highest heat possible and lid closed. Place meat on hottest part of grill and finish all sides until crisp and charred on all sides. Serve immediately!

    • Stovetop finish: preheat cast iron skillet (on stove or in oven), then add 1 tbs vegetable oil and heat until screaming hot. Add steaks and 1tbs butter and brown each side. About 45 seconds per side to get browned crust. Serve immediately!

  • Delicious mushroom wine sauce- use cast iron skillet that was used to finish meat with. May need to add more butter if pan is too dry. Add 2 cloves of garlic and a sprig of rosemary to remaining meat juice and leftover butter. Cook until fragrant, 30 seconds. Add sliced mushrooms and cook until soft and golden. Deglaze plan with wine. Stir ingredients together and cook, breaking up meat bits from bottom of pan. Simmer sauce until reduced and slightly thickened. Serve over steak and enjoy!
