Grandma’s Vegetable Beef Soup


Ingredients for broth:

  • Davidson Family Farms beef shank….soup bone with meat on it.

  • Cold water to cover the bone or bones

  • 1 tsp salt

  • Whole onion

  • 4 celery stalks

  • 3 bay leaves

  • 1 carrot


Directions

  • Put soup bones in a pot and cover them with water. Add salt. Bring to boil over high heat then turn heat to simmer and let simmer for 4 hours or so. Add more water as needed to keep the bones covered.

  • After the broth is simmering add chopped onion, celery, carrot and bay leaves.

  • After 4 hours cool to lukewarm and strain your broth. Discard the vegetables but take the meat off the bones , chop to bite size pieces and add back to the pot.

  • Refrigerate over night to bring fat to the top and scoop the fat off…who needs extra fat?!


Ingredients to finish the soup: choose any selection of your favorite vegetables and barley!  My favorites are the following;

  • ¼ cup uncooked barley.

  • potatoes

  • Carrots

  • Green beans

  • Corn

  • Can of diced tomatoes

  • Onion

  • Peas

Simmer vegetables gently in the broth until they are cooked.  Follow the directions on the box of barley for the appropriate cook time for it.
